Any guesses how many soup and salad recipes are listed in this seasonal recipe collection? Forty-freaking-two! Yes, 42! But isn't that what August does to a seasonal eater? For a few weeks, it's pure vegetable gluttony! (To say nothing of melons and peaches and and and and ...)Maybe it's these deep dives into A Veggie Venture's 14+ year collection of soup and salad recipes but I find myself completely fascinated by simple salad combinations of vegetables. It's affecting our eating patterns because LOL I have minus zero interest in cooking dinner: instead, I just want to make a salad (and BLTs and peach pound cake and blueberry cookies and ...)
Below, the August salad recipes call for caseloads of tomatoes because here in the Midwest, our local tomatoes hit in late July at the very earliest but more often early in August and then play out into early October in good years. And beets, too, because once you cook some beets, a beet salad is no more than 5 or 10 minutes from the table.
