One More Reason to Stop to Chat at the Farmers Market

Way back in 2005, the "tomato man" who's also the peach man and the basil man and (you get the idea ...) passed along this tip at the farmers market this morning. He told me how to cook corn in the microwave, that whole ears of fresh corn can be cooked in the microwave! As we discussed timing, another shopper overheard and chimed in, "I cook mine for 4 minutes."

The actual time required likely is dependent on the power of your microwave. In my microwave? Two and a half minutes is magical.

Fifteen Years Later, It's Still Paying Off

All these years later, I'll say that if you haven't yet thrown an ear of corn into the microwave, oh man, you're in for a treat! It's so-so-SO easy to cook corn this way but the corn turns out so fresh and perfect. It's my favorite way to cook just one ear for a quick salad, for throwing into a taco or an omelet or or or (you get the idea ...).

RECIPE for MICROWAVE SWEET CORN

Hands-on time: 5 minutes
Time to table: 5 minutes
Serves 1

1 ear sweet corn

Shuck corn and remove the silk and handle. Place in the microwave on high for 2 1/2 minutes – check for doneness, continue if needed, the actual time will vary based on the power of your microwave, the freshness of the corn, the size of the kernels and (you get the idea ...)

My favorite way with a corn salad? Cut the kernels from the cob, toss with lemon juice and fresh pepper.

  1. To cook corn in the microwave, I shuck it and rinse it. I do not dry it after rinsing it. Then, I wrap it in plastic wrap and microwave it til done. It's great!

When cooking ears of corn I look for the most complete husks, throw them in the microwave for about 3 minutes each and then peel the husk and silk away (be careful it can be hot on the fingers) then the corn can be shucked and it has the sweetness and flavor of a product cooked in nature's own organic baking paper.

    Delicious, easy and green.

I don't remember where I learned this, but I soak the ears (usually 2 or 3) - trimmed, but not shucked - in a pitcher of water for a few minutes, making sure that the water gets inside to the corn. Then I microwave them on high for several minutes (actually, I push the 'Vegetable' button on my microwave). As Rory said, careful - they are hot when you peel the husk.
    Perfect every time.

  6. even easier, just remove one layer of husk from the corn and most of the silk you can grab - throw the corn with remaining husks into the microwave for 2 or 3 minutes and you are done. It steams in the husks and comes out perfect every time.

  7. Microwaving in plastic wrap?? NO, NO - Please don't! That is soooo bad for you - the toxins being "baked" into the corn are deadly!

    After removing the husks and silk, I rinse the corn (DO NOT DRY)and wrap the wet corn in waxed paper so that the corn is steamed in the microwave. Comes out just perfect for my 'cornhusker' husband's taste.

  9. I repeat do not use plastic wrap; deadly for you. But specially made wax paper, for micro does the job. Plus I only cook a few mins., then let it sit to cool, in micro, which finishes the cooking. Luscious w/Cajun seasoning!

  11. Thank you for recipes. I have been here quite a few times since I found the site . I enjoy it very much however this recipe is listed as having 0 points it is not 0 points ... Starchy veggies have points...Corn...Peas and Parsnips any type of Potato any type this includes Sweet Potato.....This is not anything new they have always had Points Plus Values....Good news all Squash has 0 points plus values doesn't matter if its Winter or Summer Squash...1 small or medium ear of corn has 2 points plus values

  12. Hi Anonymous ~ Thanks for stopping by, I'm so glad you're finding A Veggie Venture useful! Two points -- ha ha -- about Weight Watchers points.

    1 - When I started A Veggie Venture in 20045, there were just points, not PointsPlus. So unless both are listed, please know the points are Old Points. With more than 1000 recipes on A Veggie Venture and 500 on Kitchen Parade, I haven't been able to afford the time to manually go back into each recipe to calculate the points. I do however provide the base nutrition info that allows visitors to calculate PointsPlus values.

    2 - Right from the beginning, I decided to calculate my own points using strict nutrition information. That's why corn shows as having no points -- again in the Old Points world -- for the half cup of corn that is the usual yield from a single ear.

    Hope this helps: questions are good, transparency is good too!

  15. I learned a new way to cook corn in the microwave from a video online. You just put the whole ear of corn, husk, silks and all, in the microwave. I live at about 8000ft. elev. and I cook one ear for 6 minutes. Let it sit for about 30 seconds. Take it out (hot!) and grasp it w/ hot mitten and slice off the bottom clear into the kernels. Grasp the 'silks' end and gently shake it out of the husk. Amazing thing is NO SILKS. Season it to suit yourself...I like butter and a little pepper.

    Mom taught me to wrap each ear (husk and all) in a piece of newspaper. Microwave about 5 minutes and then the husk and silk almost fall off the ear when you unwrap. Extra bonus, the paper and husk can go right on the mulch pile.
