About May's Recipe Collection

It's spring some places, it's full summer in others. But the point is ... for seasonal cooks, May is a "cusp" month, when winter finally fades and summer begins to show its bountiful face, when we put aside our cold-weather food sensibilities, when our palates and tables really begin to change. It's so exciting!

And hey, for all of you in the southern hemisphere, it's fall and winter, right? So the same things are happening to you, just in the opposite order. You may want to check out the November and December and even January collections, links below. Our world, isn't it so so amazing?!

So May's collection of Salads and Soup (note, not soups, just soup, there's just one soup recipe this month!) is a heady mix of simple salads for weeknights and slightly more labor-intensive salads great for meal prep or weekend fare. I hope you love these ideas! Report back what works for you, won't you please?!

Weight Watchers, you're going to love this collection! There are 6 recipes with either zero or one points! So many A Veggie Venture recipes are Weight Watchers friendly! And hey, did everyone see the news?

Meal prep people, you probably already know how handy it is to have a pot of lentils around. But if you don't, here's the scoop. It is! During warm weather, I make a pot of lentils every couple of weeks, either "Summer Lentils" or Best-Ever Lentil Salad which is more lentil-y. Both make great bases for mealtime salads, here, they're often a substitute for other protein sources.

For lots of years, I fixed on one way of roasting beets, My Favorite Way to Roast Beets. Then? I wrote a story about a St. Louis restaurant which roasts beets in a way that gives them a slight pickle. #GameChanger. That's because once you've roasted beets, beet salads are about a minute away. Just check out all the recipes calling for cooked beets in the Beet Recipes, they're marked with a little pot symbol like this one .

Quick tip, one asparagus lover to another. All asparagus spears are not the same. Fat asparagus are best for roasting. Skinny asparagus are best raw. In between can go one way or the other but they're not as easy to find. So keep your eyes peeled, don't let asparagus season pass without at least one Gorgeous Raw Asparagus Salad!

This quick salad is a favorite because it's uses inexpensive, almost-always-on-hand ingredients that people are familiar with and thus don't shy from.

Spiral Zucchini Noodle “Zoodle” Greek Salad

Lemony Broccoli with Lemon Vinaigrette

25min/25min–ww2–pp2–sp3–fs3–green3–blue3–purple3–carb4

Surprisingly Substantial. Bright and Springy. Lemony.

Lemony Broccoli with Lemon Vinaigrette, another healthy salad ♥ AVeggieVenture.com.
Broccoli + Lemon Vinaigrette

So many of my best (and reader favorite) vegetables recipes start off as happy accidents, made once in a moment of inspiration (and some times desperation!) and then repeated to see if lightning can, indeed, strike twice. If you're no fan of broccoli, a big dose of "lemon on lemon" might do the trick!
