About May's Recipe Collection
It's spring some places, it's full summer in others. But the point is ... for seasonal cooks, May is a "cusp" month, when winter finally fades and summer begins to show its bountiful face, when we put aside our cold-weather food sensibilities, when our palates and tables really begin to change. It's so exciting! And hey, for all of you in the southern hemisphere, it's fall and winter, right? So the same things are happening to you, just in the opposite order. You may want to check out the November and December and even January collections, links below. Our world, isn't it so so amazing?!
So May's collection of Salads and Soup (note, not soups, just soup, there's just one soup recipe this month!) is a heady mix of simple salads for weeknights and slightly more labor-intensive salads great for meal prep or weekend fare. I hope you love these ideas! Report back what works for you, won't you please?!

Weight Watchers Friendly.Beets + Vinegar + Olive Oil + Fresh Herbs For lots of years, I fixed on one way of roasting beets, My Favorite Way to Roast Beets. Then? I wrote a story about a St. Louis restaurant which roasts beets in a way that gives them a slight pickle. #GameChanger. That's because once you've roasted beets, beet salads are about a minute away. Just check out all the recipes calling for cooked beets in the Beet Recipes, they're marked with a little pot symbol like this one . |

Easy to Dress Up.Chickpeas + Celery + Feta + Simple Vinaigrette I really love to be the one to bring a salad or two to a potluck: and more and more, I find that the salads go first. Spiral Zucchini Noodle “Zoodle” Greek Salad30min/60min–ww2–pp2–sp3–fs3–green3–blue3–purple3–carb5 ♥Weight Watchers Friendly. Low Cal. Low Carb. Gluten Free. Vegetarian.Zucchini + Tomato + Bell Pepper + Olives + Feta Calling all you zucchini noodle lovers! Or anyone who's yet to experience the magical conversion of summer squash into "noodles". Mixed Fruit & Vegetable Salad25min/25min–ww1–pp2–sp4–fs0–green0–blue0–purple0–carb16 ♥Beautiful Color. Salad or Salad-for-Dessert? Low Carb. Weight Watchers Friendly. Vegan. No Added Fat!Part Fruit + Part Veggies + Fresh Herbs So why is is that fruit is almost always "sweet" and vegetables almost always "savory"? We love how "savory" this sweet vegetable and fruit salad is, it's something almost entirely new! |
Mark Bittman's "Salted" Chopped Salad30min/30min–ww0–pp1–sp1–fs0–green0–blue0–purple0–carb4 ♥Low Carb. Weight Watchers Friendly. "Vegan Done Real". Great for Meal Prep. Great Crunch. "Keeps."Cabbage + Other Vegetables + Salt + Lemon "Nicer than slaw," says one happy salad maker. "This stuff is delicious," says another. I like it because it's a salad to add to, a day or two after a day or two. Enjoy! |
Lemony Broccoli with Lemon Vinaigrette25min/25min–ww2–pp2–sp3–fs3–green3–blue3–purple3–carb4 ♥Surprisingly Substantial. Bright and Springy. Lemony.Broccoli + Lemon Vinaigrette So many of my best (and reader favorite) vegetables recipes start off as happy accidents, made once in a moment of inspiration (and some times desperation!) and then repeated to see if lightning can, indeed, strike twice. If you're no fan of broccoli, a big dose of "lemon on lemon" might do the trick! |
