Seasonal Soup & Salad Recipes ♥ July
Seasonal Soup and Salad recipes, ideas perfect for full summer and especially the month of July, all from A Veggie Venture's decade+ collection of 1000+ vegetable recipes. July's recipes are mostly veg(etari)an and call for easy-to-find ingredients. Find your summer salad (and soup!) inspiration here ... even new recipe ideas for Canada Day and Fourth of July salads! (Readers from the Southern Hemisphere? Look for your winter seasonal soup and salad recipes in the January collection!)
About July's Recipe Collection

familiar ingredients, often in unexpected combinations
like lots of beets and lots of blueberries – some times together!
two potato salads, my mom's recipe plus an especially festive red, white & blue potato salad for Fourth of July celebrations
two versions of caprese salads, one composed and serene, another slightly messy and deconstructed
three slaws, including one with jicama instead of the traditional cabbage
Weight Watchers, THIS Is Your Source for Easy, Low-Point Summer Salads & Soups
50% of these summer soup and salad recipes – 0 or 1 point, whether you count green, blue or purple points60% of these soup & salad recipes – low carb (10 or fewer net carbs)
More than half are vegan (or easy converted to vegan)
More than half are "no recipe" recipes, easy combinations of fresh summer produce
Who Cooks From "No Recipe" Recipes?
My friend Ann loves the "No Recipe" recipe collections from the New York Times and inspired me to try something similar. All the salads in July's collection are essentially "no recipe" recipes – just fresh vegetables plus occasional seasonal fruit or occasional canned beans plus fresh herbs plus a dressing of some sort. Can anyone cook from these simple ingredient lists? Maybe, maybe not.
But as you look through this list, realize that it's essentially a grocery list. If you keep fresh produce like this on hand, chances are, you've got tonight's salad in the bag. Is it possible you have an entire month's worth of salads on hand? Enjoy!

Creamy Feta Mousse with Greek Salads20min/90min–ww3–pp3–sp5–fs5–green5–blue5–purple5–carb3 ♥Smooth & Tangy. Summer Beautiful. Great for Meal Prep. Just a Little Somethin' Special from the Fridge.Feta + Buttermilk + White Pepper + Greek Salads No surprise, mostly my vegetable salads are all about summer's favorite vegetables! But my cooking style is also about keeping dibs and dabs in the fridge that somehow round out a salad or a meal. That's how I think about special spreads like a smooth, tangy spread that's somehow just a little bit better than feta, its main ingredient. |

No Mayonnaise.Orzo + Sun-Dried Tomatoes + Olives + Basil + Radicchio It's been way too long since making Italian-style Summer Orzo but oh! it was wonderful to have on hand when I made a big batch last week. It keeps for days, you could definitely make it a day or two in advance of a family gathering or neighborhood potluck. We ate it on its own as a side salad but it's a lovely bed for fish or seafood. So so good! |
Mom’s Potato Salad30min/45min–ww2–pp2–sp3–fs2–green3–blue2–purple1–carb13 ♥Summer Comfort Food. Potluck Favorite. Relatively (for Potato Salad) Low-Calorie & High-Protein.New Potatoes + Hard-Cooked Eggs + Mayo + Cottage Cheese + Sweet Pickle + Onion + Celery + Fresh Herbs My mother's recipe for a traditional American-style homemade potato salad – it's the one potato salad I make again and again without needing a "recipe". And while not "diet food," the recipe calls for cooked eggs and cottage cheese so the potato salad contains a good measure of protein too. Fresh herbs really brighten the flavors! |
No-Cook Tabbouleh30min/24hrs–ww1–pp2–sp2–fs1–green1–blue1–purple1–carb10 ♥Perfected Over the Years. Great Addition to Mediterranean and Middle-Eastern Meals. Weight Watchers Friendly. Vegan. Low Carb.Couscous + Lemon + Ripe Tomato + Bell Pepper + Onion + Parsley + Mint Another huge favorite from the first year of A Veggie Venture, a vegetable-packed version of traditional tabbouleh that couldn't be simpler to make. Corn & Cucumber Salad with Fresh Blueberries40min/24hrs–ww1–pp2–sp2–fs1–green1–blue1–purple1–carb10 ♥Sweet+Tart+Smoky. Weight Watchers Friendly. Low Carb. Vegan.Corn + Cucumber + Red Onion + Cilantro + Jalapeño + Blueberries + Homemade Lime-Cumin Vinaigrette In summer, we like to know people who love to grill corn (No-Guilt Grilled Corn with Chipotle-Lime Browned Butter), cook it briefly in the microwave (Microwave Summer Cream Corn) and for parties, pull out for cooler for cooking lots of ears at the same time (Cooler Corn - How to Cook Corn in a Beer Cooler). But mostly? I just throw raw corn kernels into salads. Nothin' better, people. |
Black Bean & Corn Salad45min/45min–ww1–pp1–sp2–fs1–green1–blue1–purple1–carb6 ♥Great for Meal Prep. Weight Watchers Friendly. Low Carb. Easily Whole30 Friendly. Vegetarian & Easily Vegan.Corn + Black Beans + Cucumber + Celery + Green Pepper + Cilantro + Jalapeño + Feta + Homemade Cumin-Lime Vinaigrette This salad is Summer in a Bowl, just fresh vegetables and a can of black beans, brightened with a cumin-lime vinaigrette. Succotash Salad with Green Beans, Lima Beans, Corn & Tomatoes45min/45min–ww1–pp2–sp2–fs0–green2–blue0–purple0–carb11 ♥Low Carb. Gluten Free. Paleo. Weight Watchers Friendly. Vegan.Green Beans + Lima Beans + Celery + Corn + Scallions + Mini Tomatoes + Lime-Cumin Vinaigrette This summery salad is a version of the American South's succotash, here with the traditional lima beans (just a few, they're precious) and corn, but with green beans added for bulk, celery for crunch, tomatoes for a little sweetness, all married together with a lime vinaigrette spiked with hot sauce. A real treat ... |
Red, White & Blue Potato Salad50min/6hrs–ww2–pp2–sp3–fs2–green3–blue2–purple1–carb12 ♥Festive for Patriotic Holidays & Potlucks. Packed with Vegetables. Great Crunch. Relatively (For a Potato Salad) Low Carb & High Protein. Weight Watchers Friendly.Red, White & Blue Potatoes + Hard-Cooked Eggs + Celery + Red Onion + Green Onion + Red Pepper + Radishes + Corn + Mayo + Greek Yogurt + Sweet Relish + Dijon A festive potato salad, made with a mix of red-skinned, white-skinned and amazing blue-colored potatoes, perfect for 4th of July and other American patriotic holiday gatherings. Not "low carb" (it's potato salad, after all) but still, a "lower carb" potato salad, thanks to so many vegetables and a higher measure of protein thanks to the addition of eggs and Greek yogurt. |
My First Panzanella30min/30min–ww4–pp6–sp7–fs6–green6–blue6–purple6–carb25 ♥Make It a Meal. Italian Indulgence. Embrace Occasional Carbs. Show Off the Best Summer Tomatoes. Summer Comfort Food. Works for One to Many. No Measuring. July's Best Salad Recipe in 2005!Tomatoes + Country-Style Bread + Garlic + Red Onion + Capers + Basil + Red Wine Vinegar + Olive Oil Way back in 2005, I tasted my first mind-blowing bite of panzanella, the classic Italian tomato salad.
