Day 123: Cucumber Salad with Lime & Fresh Mint ♥
Today's simple cucumber salad: Thin slices of cucumber tossed with fresh lime juice, fresh mint and just a touch of heat. Weight Watchers Friendly, just PointsPlus 1! Low Carb. Gluten Free.

SO. WAY BACK IN 2005? This salad had "good bones" but turned out to be, let me be frank, a loser. Even after doctoring a recipe from a reliable recipe source? Nothing special.
BUT. NOW TEN YEARS LATER? I played with the recipe until finally, it earned a hard-won ♥. Now? It's like a spicy cucumber mojito, a mix of wet cucumber, fresh lime juice and a smattering of fresh mint. Drink up, cucumber lovers!
RECIPE for CUCUMBER SALAD with LIME & FRESH MINT

JUST THREE INGREDIENTS (UP TO FIVE)
1 large cucumber
1 small cucumber, skin on, quartered, then sliced
2 tablespoons fresh lime juice
1 tablespoon Greek yogurt (0% works fine, sour cream would be good too)
1 tablespoon sugar (or maple syrup for a less-processed sweetener)
Fresh mint, cut in tiny bits
Good sprinkle hot sauce
Salt & pepper to taste
If you have a large garden cucumber, you'll want to trim, peel the cucumber, especially if the skin is tough; then you'll want to cut the cucumber into quarters and slice out the interior seeds. (Yeah, you're losing a third of the volume but hey, there's always the compost bowl, right?) If you have a thin-skinned English cucumber, no need to peel or seed it. Cut the large cucumber into thin-thin slices, as thin as a knife can make them.
Combine the cucumbers and the remaining ingredients. Serve the salad immediately or refrigerate and serve within a couple of hours.
ALANNA's TIPS & KITCHEN NOTES
WHY TWO WAYS FOR TWO CUCUMBERS? I like the texture difference, the variety in shape, it just somehow strikes me as "right" to thin-slice the big cucumber and then toss in another one that's considerably smaller but still make it bite-size. Is it critical? Not the least, just something I've learned to do over the years.
