Cool-as-a-Cucumber Avocado Soup ♥ A Low(er)-Calorie Recipe

Today's vegetable recipe: a quick blender soup recipe, just four ingredients and served cold. Low carb. Vegan. Lower calorie than a typical avocado soup.

Sigh. Do your eyes go dreamy too at the thought of avocados? There's simply no matching their silkiness, their smoothness. Pillow makers? How about avocado, not the color, but the cool slipperiness.

Blending cool cucumber with smooth avocado, it was a recent inspiration. The cucumber adds liquid but flavor too, unlike plain water (as most avocado soup recipes specify) or broth (which strikes me as too heavy for summer). Better still, the cucumber adds volume but few calories, keeping the avocado soup in reasonable territory, diet-wise but still tasting like an indulgence.

This soup is served cold, its own cool pillow against summer's heat. I like to serve it in small bowls with small spoons, all to encourage savoring every single silky spoonful. So much for that idea -- when I made this last, my favorite taste tester, who always leaves a bite or two behind on the plate, slurped up every last drop.


Hands-on time: 10 minutes
Time to table: 10 minutes
Makes 2 cups

2 avocados, pitted (save a bit aside to chop for garnish, if you like)
1 cucumber, peeled, seeded and chopped
1 - 2 green onions, white and light-green parts only
1/4 cup water
1 tablespoon agave or honey

Mix all ingredients in a blender until smooth. Spoon into serving bowls, top with a little chopped avocado.

I worried that the pretty light green color would darken but it didn't, at least not when covered for about 4 hours before serving.

  1. That's a great idea! Sometimes, I puree avocado as a "mousse" or sauce, but usually thin with cream or chicken broth. I definitely like the cucumbers better!

  2. Because I'm not wild about raw onions, I usually either soak them in ice water for a while, or lightly simmer them in water to remove some of the "bite" of the onion.

  5. I just made the season's first batch of gazpacho last night and was thinking it might be nice with a little chopped avocado on top. Now I'm wishing I had a couple of avocados to make this soup—it sounds even more refreshing than the gazpacho! And I love that it doesn't call for chicken stock. I can't tell you how many chilled soup recipes I've stopped reading as soon as I saw chicken stock on the ingredient list—eating it cold just sounds weird to me.

  8. Yum, this sounds delicious! I made avocado soup once for my husband when I first met him, but that was just avocadoes, garlic and cream. Still delicious, but I want to try this one, too.

  9. I'm not a fan of avocado soup, but Jeff loves it, so I make it frequently. I too am surprised it didn't oxide; I usually add lime juice to mine. I like cilantro too.

  10. This soup looks so cool and refreshing; I'll have to make it just for me as I'm the only one in my family that loves avocado!

  11. We made a green gazpacho the other night - 1.5 cups cucumber chunks, 1/2 c. diced scallions, one minced clove garlic, 1/2 c. chopped cilantro. Would have been even better with avocado! And your soup might be enhanced with some cilantro.
