Seasonal Soup & Salad Recipes ♥ March

Seasonal Soups & Salads for March, a monthly feature ♥ A Veggie Venture
Seasonal Soup and Salad recipes, ideas perfect for the month of March, all from A Veggie Venture's decade+ collection of 1300+ vegetable recipes. March's recipes are mostly veg(etari)an, mostly Weight Watchers friendly, mostly naturally gluten free and call for easy-to-find ingredients. Find your March salad (and soup!) inspiration here ...

About March's Recipe Collection

Seasonal cooks know the feeling: it's not yet spring, not yet. (In fact, my hometown of St. Louis is slated for a weekend of snow and single-digit temps this very weekend.) But seasonal cooks are beginning to lighten up our palates. Soups, yes, but a little bit lighter. Salads, of course, nothing indulgent but hearty enough for a light lunch or soup+salad supper.

And I'm so pleased that A Veggie Venture's March soup and and salad recipes reflect this annual bridge period: not quite winter but not yet spring. Lots of citrus. Plenty of late-winter greens. A special soup for St. Patrick's Day. The earliest asparagus, not local of course but decidedly welcome. Lots of hard-cooked eggs, a nod to future Easter celebrations – except whoa! Easter falls so late this year, April 21st!

Happy Cooking, All! I hope you find at least one recipe you can't wait to make! Let me know which one(s) appeal!

Winter Tomato Salad (Quick Pickled Vegetables) ♥ AVeggieVenture.com, winter tomatoes worth eating! Very Weight Watchers Friendly. Vegan. Quick. Great for Meal Prep. Naturally Gluten Free.
Roma Tomatoes + Bell Peppers + Cucumber + Onion.

Winter tomatoes worth eating? How about winter tomatoes worth craving? Just ten minutes time and you've got a jar of quick pickles for salads, sides, more.

Seductive Kale Salad

5min/20min–ww0–pp0–sp0–fs0–green0–blue0–purple0–carb3

One Ingredient! Quick. Super Easy to Make. Vegan. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Whole30 Friendly. Great for Meal Prep.

Seductive Kale Salad, another healthy salad ♥ AVeggieVenture.com. Quick. Vegan. Naturally Gluten Free. Very Weight Watchers Friendly.
Kale + That's It!

If I've learned one thing writing about vegetables for A Veggie Venture since, um ... 2005 ... it's that it isn't that people don't like vegetables, they don't like how they're prepared. I re-learned my own lesson for kale, which I'm iffy on (except in soups) just by switching up the cooking method. Hence the seduction of kale ...

Bok Choy Salad with Homemade Creamy Vinaigrette

15min/15min–ww2–pp2–sp3–fs3–green3–blue3–purple3–carb5

Vegetarian. Naturally Gluten Free. Low Carb. Weight Watchers Friendly. Super Easy to Make, No Measuring! Works for One to Many. Great Crunch. Rave Reviews.

Bok Choy Salad with Homemade Creamy Vinaigrette, another quick, flexible & dare-I-say addictive salad ♥ AVeggieVenture.com. Low Carb. Weight Watchers Friendly. Naturally Gluten Free.
Bok Choy + Salad Stuff + Vinaigrette.

#1 Getting a little tired of lettuce salads? spinach salads? Try bok choy, an Asian leafy green, it's easy to find and in my groceries, inexpensive too. The stems have great crunch and the leaves have just a touch of bite, you know, like arugula.

#2 But if you're not into bok choy, do try the dressing, not a vinaigrette but a creamy vinaigrette. The combo is especially good with late-winter citrus.

Asparagus Scallion Salad with Hard-Cooked Egg

25min/60min–ww1–pp2–sp3–fs1–green2–blue1–purple1–carb5

Vegetarian. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Whole30 Friendly.

Asparagus Scallion Salad with Hard-Cooked Egg, another healthy, substantial salad ♥ AVeggieVenture.com. Weight Watchers Friendly. Naturally Gluten Free. Dreamy for Spring!
Asparagus + Green Onion + Egg.

It won't be local but asparagus will soon be appearing in grocery stores. And if you twist my arm, I'll admit to appreciating the not-local asparagus because it's just not so darned precious: you can buy it with abundance for a few months instead of for a king's ransom for a few weeks. I am hoping for a resurgence of our own asparagus garden, Vegetables 101: The Beauty of Asparagus Berries!

Finnish Rosolli Salad

75min/24hrs–ww2–pp3–sp4–fs3–green3–blue3–purple3–carb7

Vegetarian. Vegan. Naturally Gluten Free. Low Carb. Make-Ahead. Very Christmas-y! Or Easter-y!

Finnish Rosolli Salad ♥ AVeggieVenture.com, a rainbow of grated beet, carrot and potato traditional at Christmas in Finland but somehow perfect for Easter too. LowCarb. Paleo. Gluten Free. Whole30.
Beet + Carrot + Potato.

Such a lovely salad, this! In Finland, it's traditional at Christmas but I'm keen on it for Easter. A bright display of ribbons of potato, beet and carrot, a Rosolli Salad is a small production but good news, it's best if made a day ahead of time.

Insalata di Finocchio aka Fennel Salad

15min/15min–ww2–pp2–sp2–fs1–green2–blue1–purple–carb2

Vegetarian. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Whole30 Friendly. Super Easy to Make, No Measuring! Works for One to Many.

Insalata di Finocchio aka Fennel Salad, a classic Italian salad with fennel and cooked egg ♥ A Veggie Venture. Weight Watchers Friendly. Low Carb. Quick and Easy.
Fennel + Lemon + Egg.

In contrast, Insalata di Finocchio is an old-fashioned Italian salad, a simple mix of fennel and hard-cooked eggs. Anyone with a surplus of cooked eggs? This is your salad. I can also imagine it made with celery, bok choy, even jicama, any vegetable with wet crunch. When remaking it recently, I wondered if the salad would be more "egg salad with fennel" instead of a fennel salad. But because the egg is soft and the fennel is crunchy, the egg slips into the background. Still: protein.

Seasonal Soups for MARCH

Weight Watchers Mexican "Zero Points" Soup

40min/1hr–ww0–pp1–sp1–fs0–green0–blue0–purple0–carb6

Soooo Many Vegetables! Vegan. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Whole30 Friendly. Great for Meal Prep. Rave Reviews. Pinterest Loves It!

Weight Watchers Mexican Zero Points Soup ♥ AVeggieVenture.com, the spicy adaptation of the famous original zero points soup. Vegan. Low Carb. Gluten Free. Whole 30. Obviously, Weight Watchers Friendly!
Bell Pepper + Poblano + Jalapeño + Tomatillo + Tomato + Zucchini + Green Beans.

Pinterest and soooo many cooks love this soup! I call it the "spicy" version of the Weight Watchers Zero Points Garden Vegetable Soup, which is great but definitely easy on the palate. And besides, people, variety, right?

Gypsy Pot

45min/90min–ww2–pp3–sp4–fs2–green2–blue2–purple2–carb18

Soooo Many Vegetables! Vegetarian but Easily Vegan. Naturally Gluten Free. Weight Watchers Friendly, Especially Freestyle. Great for Meal Prep.

Gypsy Pot, the concept recipe with the romantic name ♥ AVeggieVenture.com. WW Friendly. Easily vegetarian or vegan. Recipe includes tips, nutrition, WW points.
Winter Squash + Carrots + Pears (I know, right?!) + Chickpeas + Green Beans + Tomatoes + Almonds.

Try not falling in love with just the name Gypsy Pot, why don't you? Impossible. At least for me. But then there's the soup. It's chockful of vegetables and a little fruit plus chickpeas so is especially suited for those who follow the Weight Watchers freestyle program – all free ingredients!

Cream of Celery Soup

20min/60min–ww1–pp2–sp2–fs2–green2–blue2–purple1–carb11

Vegetarian but Easily Vegan. Naturally Gluten Free. Weight Watchers Friendly. Whole30 Friendly (with ghee). Great for Meal Prep. Rave Reviews!

Cream of Celery Soup, another healthy soup ♥ A Veggie Venture, a simple homemade celery soup, all about the celery and way more than the sum of its parts. Rave reviews!
Celery + Potato.

This soup is a staple in my kitchen, there's just something so homey and captivating about the delicate flavor of celery. I'm not alone: rave reviews! And it's healthy too: the "creamy" in "Cream" of Celery comes from a potato, not cream.

No-Cream Creamy Cauliflower Soup

20min/60min–ww2–pp2–sp3–fs2–green2–blue2–purple2–carb5

Just Three Ingredients! Vegan (made with water). Naturally Gluten Free. Low Carb. Weight Watchers Friendly. Great for Meal Prep. Rave Reviews.

No-Cream Creamy Cauliflower Soup, just 3 ingredients ♥ AVeggieVenture.com. Recipe includes tips, nutrition, WW points.
Cauliflower + Onion.

And another no-cream "creamy" soup, this time the creaminess comes from an onion and technique. I just don't understand why so many cauliflower attempt to hide the cauliflower. Especially when made with water, this soup is all about the cauliflower.

Spring Garden Vegetable Soup with Asparagus, Artichokes, Peas & Spinach

20min/24hrs–ww1–pp2–sp3–fs1–green1–blue1–purple1–carb9

Spring in a Bowl! Sooo Many Vegetables! Vegetarian. Naturally Gluten Free. Low Carb. Weight Watchers Friendly. Great for Meal Prep. Comfort Food. Impressive Appearance!

Spring Garden Vegetable Soup with Asparagus, Artichokes, Peas & Spinach, a bowlful of our favorite spring vegetables ♥ AVeggieVenture.com. Recipe includes tips, nutrition, WW points. Low Carb. Low Cal. Gluten Free.
Leek + Celery + Carrot + Artichokes + Asparagus + Peas + Spinach.

This is almost a spring version of my ever-so-favorite Finnish Summer Soup which relies on the earliest summer vegetables. Instead, this one's all about the spring specialties. I keep thinking about our friend Dale who won't eat soup. Why? And here, how???

Pride of Erin Soup

25min/60min–ww2–pp3–sp5–fs3–green3–blue3–purple3–nc18

Easily Converted to Vegetarian. Soup Especially for St. Patrick's Day. Great for Meal Prep. Hearty Comfort Food.

Pride of Erin Soup ♥ A Veggie Venture, a simple cabbage, potato and kale soup, perfect for St. Patrick's Day. Recipe includes tips, nutrition, WW points.
Cabbage + Potato + Kale.

Plus a secret ingredient ... bits of stinky cheese! Who else has noticed that cabbage in a soup is just so-so good? This one's timed for St. Patrick's Day but perhaps a trial run is in order?

Polish Dill Pickle Soup

25min/45min–ww3–pp4–sp6–fs5–green5–blue5–purple3–carb22

Creamy. Naturally Gluten Free. Great for Meal Prep. Worth the Novelty!

Polish Dill Pickle Soup, potato-y but also pickle-y soup ♥ AVeggieVenture.com. Recipe includes tips, nutrition, WW points.
Potato + Dill Pickles.

If you haven't tried Dill Pickle Soup, that experience awaits! This is one of the top soups at a soup-crazy St. Louis restaurant. It's like making soup out of air! Or a jar from the fridge.

Chayote Soup with a Kick

35min/2hrs–ww4–pp5–sp7–fs7–green7–blue7–purple7–carb9

Easily Converted to Vegetarian. Naturally Gluten Free. Low Carb. Comfort Food. Rave Reviews.

Chayote Soup with a Kick, a creamy bisque served at room temperature or chilled ♥ AVeggieVenture.com. Recipe includes tips, nutrition, WW points.
Roasted Poblano + Spinach + Chayote.

Chayote? Yes, they're a vegetable thing, you might call them mirliton or christophene or ... plumber's backside. (Find one, you'll see exactly what I mean!) But they make a fine soup, this one repeated in my kitchen after making it at a cooking school in Oaxaca, Mexico.

Bonus Recipe for MARCH

Orange & Cumin Vinaigrette from Kitchen Parade

Vegetarian but Easily Vegan. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Super Easy to Make, No Measuring! Easily Adaptable to Serve One to Many.

Orange & Cumin Vinaigrette ♥ KitchenParade.com, bright and vibrant, fresh-squeezed citrus with earthy cumin.
Orange + Lemon + Cumin.

If you make nothing else this week, make salad dressing! Those bottles of dressing from the grocery store just aren't worth the money and besides ... they're plain b-o-r-i-n-g. This simple citrus vinaigrette? Definitely not boring! And the citrus is so wonderful right now ... take advantage!

  1. I immediately made the asparagus/scallion/egg salad - using balsamic vinegar since I was out of wine vinegar. Big hit with the eaters here. The orange/cumin vinaigrette was used on a black bean/bell pepper/shallot/cilantro salad and was another winner. Many thanks for the inspiration, next week some soup!

    1. Fairfax Avenue ~ Music to my ears! I’m so glad this collection of recipes struck an, ahem, chord with you!

PS I told my sister I was going to use that orange/cumin vinaigrette on your exact same combo of black beans/bell pepper/cilantro and she said, Oh no, it’s got to be lime. I’ll tell her “I told you so!” Tee hee.

    2. I used 3 peppers, red, orange, yellow cut into approx 1" x 1/4" serving size, 1 shallot sliced into thin rings. Saute in olive oil until shallots are limp and peppers al dente. Combine with beans and stir in a handful of chopped cilantro and the dressing. Chill. Serve.

Oddly enough, the vegetable combination came from a grocery store mailer that suggested using the bean/pepper/cilantro mix to fill an omelet. Added the shallot because it was waiting to be used!
