About March's Recipe Collection
Seasonal cooks know the feeling: it's not yet spring, not yet. (In fact, my hometown of St. Louis is slated for a weekend of snow and single-digit temps this very weekend.) But seasonal cooks are beginning to lighten up our palates. Soups, yes, but a little bit lighter. Salads, of course, nothing indulgent but hearty enough for a light lunch or soup+salad supper.And I'm so pleased that A Veggie Venture's March soup and and salad recipes reflect this annual bridge period: not quite winter but not yet spring. Lots of citrus. Plenty of late-winter greens. A special soup for St. Patrick's Day. The earliest asparagus, not local of course but decidedly welcome. Lots of hard-cooked eggs, a nod to future Easter celebrations – except whoa! Easter falls so late this year, April 21st!

Try bok choy, an Asian leafy green, it's easy to find and in my groceries, inexpensive too. The stems have great crunch and the leaves have just a touch of bite, you know, like arugula. #2 But if you're not into bok choy, do try the dressing, not a vinaigrette but a creamy vinaigrette. The combo is especially good with late-winter citrus. |

Such a lovely salad, this! In Finland, it's traditional at Christmas but I'm keen on it for Easter. A bright display of ribbons of potato, beet and carrot, a Rosolli Salad is a small production but good news, it's best if made a day ahead of time. |
Insalata di Finocchio aka Fennel Salad15min/15min–ww2–pp2–sp2–fs1–green2–blue1–purple–carb2 ♥Vegetarian. Naturally Gluten Free. Low Carb. Very Weight Watchers Friendly. Whole30 Friendly. Super Easy to Make, No Measuring! Works for One to Many.Fennel + Lemon + Egg. In contrast, Insalata di Finocchio is an old-fashioned Italian salad, a simple mix of fennel and hard-cooked eggs. Anyone with a surplus of cooked eggs? This is your salad. I can also imagine it made with celery, bok choy, even jicama, any vegetable with wet crunch. When remaking it recently, I wondered if the salad would be more "egg salad with fennel" instead of a fennel salad. But because the egg is soft and the fennel is crunchy, the egg slips into the background. Still: protein. |

Whole30 Friendly. Great for Meal Prep. Rave Reviews. Pinterest Loves It!Bell Pepper + Poblano + Jalapeño + Tomatillo + Tomato + Zucchini + Green Beans. Pinterest and soooo many cooks love this soup! I call it the "spicy" version of the Weight Watchers Zero Points Garden Vegetable Soup, which is great but definitely easy on the palate. And besides, people, variety, right? |

Great for Meal Prep.Winter Squash + Carrots + Pears (I know, right?!) + Chickpeas + Green Beans + Tomatoes + Almonds. Try not falling in love with just the name Gypsy Pot, why don't you? Impossible. At least for me. But then there's the soup. It's chockful of vegetables and a little fruit plus chickpeas so is especially suited for those who follow the Weight Watchers freestyle program – all free ingredients! |

Great for Meal Prep. Rave Reviews!Celery + Potato. This soup is a staple in my kitchen, there's just something so homey and captivating about the delicate flavor of celery. I'm not alone: rave reviews! And it's healthy too: the "creamy" in "Cream" of Celery comes from a potato, not cream. |

Great for Meal Prep. Rave Reviews.Cauliflower + Onion. And another no-cream "creamy" soup, this time the creaminess comes from an onion and technique. I just don't understand why so many cauliflower attempt to hide the cauliflower. Especially when made with water, this soup is all about the cauliflower. |

If you haven't tried Dill Pickle Soup, that experience awaits! This is one of the top soups at a soup-crazy St. Louis restaurant. It's like making soup out of air! Or a jar from the fridge. |

Rave Reviews.Roasted Poblano + Spinach + Chayote. Chayote? Yes, they're a vegetable thing, you might call them mirliton or christophene or ... plumber's backside. (Find one, you'll see exactly what I mean!) But they make a fine soup, this one repeated in my kitchen after making it at a cooking school in Oaxaca, Mexico. |

I immediately made the asparagus/scallion/egg salad - using balsamic vinegar since I was out of wine vinegar. Big hit with the eaters here. The orange/cumin vinaigrette was used on a black bean/bell pepper/shallot/cilantro salad and was another winner. Many thanks for the inspiration, next week some soup!

DeletePS I told my sister I was going to use that orange/cumin vinaigrette on your exact same combo of black beans/bell pepper/cilantro and she said, Oh no, it’s got to be lime. I’ll tell her “I told you so!” Tee hee.
I used 3 peppers, red, orange, yellow cut into approx 1" x 1/4" serving size, 1 shallot sliced into thin rings. Saute in olive oil until shallots are limp and peppers al dente. Combine with beans and stir in a handful of chopped cilantro and the dressing. Chill. Serve.
DeleteOddly enough, the vegetable combination came from a grocery store mailer that suggested using the bean/pepper/cilantro mix to fill an omelet. Added the shallot because it was waiting to be used!
