It's already been a long day when, whoops, we realize: no salad, no vegetable. That's why I've collected all my quick vegetable recipes, the ones which take no more than five minutes of hands-on time to prep.

About This Collection of Five-Minute Vegetable Recipes
(We Do Have Five Minutes, Right?)
Every single vegetable recipe in this recipe collection is prepped in five minutes.
Three dozen recipes are ready for the table in five minutes flat! Those recipes are tagged 5min/5min.
The remaining recipes do take longer to get to the table, maybe ten minutes, maybe 24 hours, depending. They're tagged 5min/10 or 5min/24hrs, say.
Each recipe's hands-on time and time-to-table are right here on this page, no clicking through trying to figure it out.
But In General, How To "Create" Quick Vegetable Recipes
TO SAVE PREP TIME Stock up on fresh vegetables that required little trimming and cutting. Think eggplant and tomatoes versus butternut squash and leeks.
FOR ZERO PREP WORK Keep "convenience vegetables" on hand for serving at the last minute. For frozen vegetables, think bell peppers, corn, green beans and spinach, say. For fresh vegetables, think bags of arugula, cabbage, salad greens, sugar snap peas and snowpeas, say.
FOR ZERO COOKING TIME Stock up on fresh vegetables that are eaten raw. Think cucumbers and tomatoes versus potatoes and sweet potatoes.
TO TIME-SHIFT THE COOKING TIME Meal prep vegetables ahead of time, then use them later in different sides and salads. Think asparagus and beets and roasted vegetables versus leafy greens and .
Collect recipes that cook quickly, a microwave helps (here are my Microwave Vegetable Recipes), so does a quick sauté.
