Seasonal Soup and Salad recipes, summery ideas perfect for the month of June, all from A Veggie Venture's decade+ collection of 1000+ vegetable recipes. As usual, June's recipes are mostly veg(etari)an and mostly low-carb and call for fresh summer vegetables and other easy-to-find ingredients, mostly common pantry ingredients. About June's Recipe Collection
Discerning readers will notice the change, how May's recipes were springy but June's are decidedly summery. That's how it works for those of us who are seasonal cooks. No tomatoes yet, it's too soon for that. No summer fruits, either, also too early. Most of all? No soups! Since 2005, I've never once posted a summer soup recipe during June! "Hunger is the best sauce" and all that but I think the earthy beets and creamy-salty feta drizzled with lemon juice had something to do with the big smiles that ensued. |

I don't know how or why but oh! those northern potatoes are extra good! My Finnish sister made this salad for us one evening when we last visited her and I've been making it this way ever since – even without the special potatoes, so-so good. |

Naturally Gluten Free.Cucumber + Sour Cream + Chive So "Nana" was my grandmother and I believe, through a combination of family lore and cultural research, that her birth family was German-Russian. Lo and behold, more evidence: other German Russians who chimed in when I first published this recipe way back in 2005. Cucumbers "brined" in a little sour cream are super simple and hmm ... again ... sumptuous. Forgive me! |

Fresh & Crunchy.Beets + Carrots + Kohlrabi + Lemon + Honey + Herbs + Hot Sauce So many vegetables can be eaten raw ... but beets, really? Yep! Just try a Raw Beet Sandwich if you want to give raw beet a try with little effort. The key, I think, is getting the beet thin enough (for a sandwich) or small enough (for a salad). In this salad I tried a mandoline but found it fussy with raw beet so switched to a cheese grater. Much easier and just the right small size! |

Great Color & Great Crunch.Asparagus + Edamame + Radish The thing about salads, you can toss together almost any vegetables and so long as you mix color and shape and texture, odds are high, the salad will just work. Then again? Some times certain slightly unusual combinations really work and this is one of those, asparagus plus edamame and radish. The local asparagus is gone but luckily, the markets will still carry asparagus for many weeks. |

Weight Watchers Friendly.Cauliflower + Hard-Cooked Eggs + Traditional Potato Salad Dressing If you love cauliflower's acts of chameleon (you know, like for rice in risotto and for chickpeas in hummus and more), then a classic potato salad made with cauliflower instead of potatoes is right up your alley. I never try to "fool" anyone with cauliflower but it does have a creaminess that mimics potatoes and other starchy plants. |
