Quinoa Salad with Tomato-Balsamic Vinaigrette ♥

Today's adaptable quinoa salad, easy to change up. It works as a main dish salad but a side salad too. It has a triple dose of protein, quinoa plus black beans plus still more from the tangy feta. That makes the salad extra-filling and satisfying, even a half cup at a time. This is a useful "concept recipe" just by swapping out beans and seasonal vegetables and even cheeses. Here I've used late-summer vegetables but it's easy to imagine spring and summer versions too. Real Food, Fresh & Flexible. Little Effort, Big Taste. Great for Meal Prep & Potlucks. Weight Watchers Friendly. Vegetarian but Easily Converted to Vegan. Naturally Gluten Free.

Zucchini Bread with Pumpkin ♥

Here's an easy, moist quick bread but with identity issues. It's zucchini bread, flecked with barely detectable summer squash. But it's also pumpkin bread, rich in color. And it's a spice cake, packed with cinnamon and nutmeg! I love the season-crossing combination of zucchini and pumpkin in the same loaf, a nod to bidding summer farewell and welcoming the cooler days of fall. It's lovely on Day One but even better on Day Two. Better still? I've given the recipe a healthy makeover, cutting calories by half – though you'd never guess! Real Food, Comfort Food, Perfect for Late Summer & Early Fall. Budget Friendly. Weeknight Easy, Weekend Special. Great for Make-Ahead & Food Gifts. Rave Reviews.

Green Rice ♥

Love rice? Now there's a brand-new rice color, just rice turned bright green by cooking it in a blend of spinach, kale, coconut milk and water instead of plain water. The intense green color would be a show-stopper for St. Patrick's day but is too delicious (and pretty!) to wait. Real Food, Fast & Casual. Beautiful Color. Year-Round Kitchen Staple. Budget Friendly. Little Effort, Big Taste. Great for Meal Prep. Not just vegan, Vegan Done Real . Naturally Gluten Free.

Tomato & Rice Salad ♥

Leftover rice + some good tomatoes + 10 minutes = a refreshing summer salad, one that's become a summer staple here. So good! PS For anyone else who needs a rice fix every so often, this is a great way to keep the carbs in control. Real Food, Fast & Casual. Not Just Easy, Summer Easy . Budget Friendly. Little Effort, Big Taste. Weeknight Easy, Weekend Special. Great for Meal Prep. Low Fat. Weight Watchers Friendly. Not just vegan, Vegan Done Real . Naturally Gluten Free.
