Day 13: Roasted Asparagus with Feta ♥

How to roast asparagus without oil with no more than a little salt and high heat. While roasting, the asparagus is topped with feta for sharp bursts of melty cheese.

Green Cabbage Salad ♥ with Fresh Lime Vinaigrette

A quick-to-make combo of thin-sliced green cabbage and other vegetables with great color and crunch, all brightened with a vinaigrette that starts with fresh lime juice and ends with a touch of heat from hot sauce. So good and somehow more "cabbage salad" than "cabbage slaw". Fresh & Ready for Spring. Great for Meal Prep. Low Carb. Low Fat. Very Weight Watchers Friendly. Not just vegan, Vegan Done Real. Naturally Gluten Free.

What're You Loving?Me, it's salads. Ask me what I'm hungry for? "Salad." Ask me what's for dinner? "Salad." Ask me to bring something to a potluck picnic? "Salad." Salad, salad, salad. And more salad. It's not a diet thing, it's just what tastes good.

It might be the Soup & Salad Effect, I blame credit the deep dives into A Veggie Ventures some-1300 recipes, looking just at the soups and salads from years back. (For example, April's collection includ…

About April's Recipe CollectionApril's recipes ride the cusp of late winter and early spring. All but one of April's recipes are vegetarian and many are vegan. All but one call for easy-to-find ingredients — and even the "hard to find" ingredient, dandelion greens, might be as close as your back yard! And then? There are four salad dressings and a challenge, me to you, to "never buy salad dressing again"!

Mostly, I'm struck how April's seasonal recipe collection is a "bridge" between late winter and spring: the salads are mostly more substantial and the soups ar…

Cauliflower "Hummus" ♥

Today's low-carb "hummus" recipe, made with (surrrrprise!!) cauliflower instead of chickpeas. And I have to say, cauliflower has done the impossible again, converting itself into something it's not, this time lower-calorie, low-carb hummus. Really, there's no telling the difference. Not just vegan, "Vegan Done Real". Naturally Gluten Free.

Cauliflower, It's a Real Chameleon.Cauliflower mimics the texture of rice in Cauliflower Spanish "Rice" and Mexican Cauliflower "Rice" and the heft of potatoes in both Lighter Mashed 'Potatoes' and Cauliflower "Potato" Salad. Now here is cauliflower in hummus, a low-calorie, low-carb substitute for high-calorie, high-carb chickpeas. See what I mean? Cauilflower is a chameleon!

But Does Cauliflower Really Substitute for Chickpeas? And yes, side by side, someone paying ext…

About March's Recipe CollectionSeasonal cooks know the feeling: it's not yet spring, not yet. (In fact, my hometown of St. Louis is slated for a weekend of single-digit temps and snow this very weekend.) But seasonal cooks are beginning to lighten up our palates. Soups, yes, but a little bit lighter. Salads, of course, nothing indulgent but hearty enough for a light lunch or soup+salad supper.

And I'm so pleased that A Veggie Venture's March soup and and salad recipes reflect this annual bridge period: not quite winter but not yet spring. Lots of citrus. Plenty of late-winter greens. A special soup for St. Patrick's Da…

Soup, Glorious Soup. Especially During the Cold Months. As the air turns cooler in the fall, the food on the table turns warm. From then until spring, soup it is, a couple of times a week. I make soup in big batches; the leftovers are perfect for quick lunches and light suppers. Often, some goes into the freezer. (Hint-Hint: Homemade Vegetable Beef Soup freezes beautifully!)

Homemade Vegetable Beef Soup is a flavorful soup. It is all about the vegetables but with enough meat to feel substantial. Make it over a couple of days if you can, so that the fat can be removed from the beef stock and the flavors can meld.

And it's a "concept recipe" – more a starting point, really, than an exacti…

Oh! The color! I so remember the color!

I wasn't long out of university – though settled into my first apartment, my first grown-girl suits and pumps and even my first first job – when one Friday night, I fell into a string of potent cocktails. Singapore slings, I think they were although unsurprisingly due to time and said-string, my memory's a little fuzzy on the detail. What I do remember is the appeal — the outright seduction — of the bejeweled color of those sweet cocktail concoctions.

Those looooong-ago cocktails popped into my brain as I grated first cabbage and then carrot the other night. Like dazzlin…
