About September's Recipe Collection
My husband and I have this big debate: Does the weather turn cooler at Labor Day? I say no. He says yes. I say September's still hot. He says September's a touch cooler. But the thing about September is that we're both right. Because seasonal cooks and seasonal eaters take our cues not only from what's in the market but also from the shorter days, the cooler evenings, the darker mornings, whenever they begin. Some years, some days, some parts of the world are warmer than others but some years, days and geographies are cooler. These are the "bridge" months, the ones where we on one side of the bridge are the summer tomatoes and cucumber salads and on the other are the first butternut squash and heartier soups.
A Veggie Venture's now sixteen-year collection of September vegetable recipes reveals exactly that, some recipes that are decidedly summery, others showing signs of fall.
Happy cooking, happy eating, all, wherever your place on the "bridge" ...

Apple Cider Vinaigrette5min/24hrs–ww0–pp0–sp1–fs1–green1–blue1–purple1–carb4 ♥Vegan. Oil Free. Naturally Gluten Free. Very Weight Watchers Friendly! Low Carb.If you meal prep just one thing every week, make it salad dressing! Here, we eat salads at least twice a day and often use a drizzle of some sort of homemade salad dressing (though not this one) on morning egg-side vegetables too. |
Warm Lentil Salad with Spinach & Goat Cheese25min/60min–ww2–pp3–sp4–fs1–green3–blue1–purple1–carb8 ♥Year-Round Kitchen Staple. Great for Meal Prep & Meatless Monday. Low Fat. High Protein. Naturally Gluten Free. Weight Watchers Friendly. Vegetarian. This easy lentil dish was b-u-r-i-e-d for years but was resurrected to stand on its own a year back. It's one of those one-pot suppers we all love, especially (at least here) early in the week. |
Tomato & Rice Salad10min/10min–ww2–pp2–sp3–fs3–green3–blue3–purple3–carb11 ♥Weight Watchers Friendly. Naturally Gluten Free. Not just vegan, Vegan Done Real.Leftover rice + some good tomatoes + 10 minutes = a refreshing summer salad, one that's become a summer staple here. So good! PS For anyone else who needs a rice fix every so often, this is a great way to keep the carbs in control. |
Easy Steamed Bok Choy Salad10min/15min–ww1–pp2–sp2–fs2–green2–blue2–purple2–carb6 ♥Quick to Make. Great for Meal Prep. Weeknight Easy. Weight Watchers Friendly. Low Carb. Easily Gluten Free. Vegan. Best Salad Sept 2013.How often do you cook bok choy? Not often? Not often enough? LOL Me either. But this is an easy way to experiment with bok choy, the others are Bok Choy Salad with Homemade Creamy Vinaigrette and Kalamata Tuna Salad Bok Choy Wraps. |
Beet Salad with Sumac, Yogurt & Pita15min/15min–ww2–pp3–sp4–fs1–green1–blue1–purple1–carb9 ♥Low Carb. Weight Watchers Friendly. Quick-Quick to Make. With just two of us at the table now, it's some times fun to open a bottle of wine (or pour some lemonade), put some appetizers between us and, well, call it "dinner". This is a great starter, just add some raw veggies, a few olives and fresh melon slices. Tis a social, shareable feast! |
Cherry Tomato & White Bean Salad25min/35min–ww1–pp2–sp2–fs1–green2–blue1–purple1–carb7 ♥Fresh & Seasonal. Hearty & Filling. Full of Rosemary-Garlic Flavor. Low Carb. Weight Watchers Friendly. Great for Meal Prep.Bean salads can be a little ... um ... blah? But for this salad, the oil used in the dressing is infused with rosemary and garlic, flavoring both the creamy white beans and the tomatoes. |
Mighty Perfect Cabbage & Broccoli Coleslaw40min/60min–ww1–pp2–sp3–fs3–green3–blue3–purple3–carb10 ♥A Cook's Illustrated Recipe. Pretty Color. Great for Meal Prep, a Refrigerator Salad. Not just vegan, "Vegan Done Real".Cook's Illustrated set out to fix all that go wrong with coleslaw and came up with this slaw. The best news? The techniques can be used in your own favorite coleslaw recipe. I made this slaw this month and it was as good on the 10th day as the 1st. |
Raw Butternut Squash Salad20min/20min–ww1–pp2–sp3–fs2–green2–blue2–purple2–carb12 ♥Unusually Raw. Beautiful Color. Vegan. Best September Salad in 2011.Raw butternut squash? Really??? Really. Choose a small butternut and grate it, you'll be surprised how sweet and tender it is. |
Spaghetti Squash Salad with Tomato, Basil & Feta20min/30min–ww1–pp2–sp4–fs2–green2–blue2–purple2–carb8 ♥Fresh & Summery. Save Time With the Microwave. Low Carb. Weight Watchers Friendly.I'm less keen on spaghetti squash than many others, sure it's low in calories but it just doesn't have much flavor, does it? So long as you doctor up spaghetti squash with other ingredients, all's good! I do like to use spaghetti squash to bulk up what would usually be a high-calorie dish, think Buffalo Chicken Dip with Spaghetti Squash. |
Julia Child's Lentil Salad20min/60min–ww5–pp6–sp7–fs6–green7–blue6–purple6–carb5 ♥Healthy Legume Salad. Laced with Autumn Herbs. Great for Meal Prep. Vegan. Low Carb.Julia Child fans, add her simple lentil salad to your repertoire! I especially like the "fall flavors" in this salad, also topping the "decidedly brown" salad with cooked egg for appearance's sake. Make it a meal? Absolutely. |
Quinoa Salad with Chickpeas45min/45min–ww4–pp5–sp7–fs2–green6–blue2–purple2–carb25 ♥Concept Recipe. Call It a Side or Call It Supper. If you're looking for a great base for a quinoa salad, start here. With both quinoa and chickpeas, this salad is both filling and satisfying, even a small serving at a time. |

Tomato & Sour Cherry Gazpacho15min/15min–ww1–pp2–sp3–fs1–green1–blue1–purple1–carb15 ♥Savory Summer Chilled Soup. Quick to Make. Beautiful Color. Weight Watchers Friendly.Who has sour cherries in the freezer? (I sure wish I did this year ... ) I adore tomato and fruit combos for Spanish-style gazpacho, this one takes a sour turn that's quite lovely. Would rhubarb work? I think so. What else is sour, maybe tomatillos? rhubarb? |
Yellow Squash Coconut Soup30min/90min–ww2–pp3–sp4–fs3–green3–blue3–purple3–carb11 ♥Concept Recipe. Beautiful Color. Vegan. Great for Meal Prep. Best Soup September 2007.Yellow squash makes the prettiest soups! And this one employs a Julia Child technique to thicken the soup, rice (or here, farro) to thicken the soup. |
Butternut Squash Soup with Mango & Toasted Coconut30min/3hrs–ww2–pp3–sp5–fs3–green3–blue3–purple3–carb13 ♥Beautiful Color. Smooth & Satisfying. Serve Hot or Cold. Great for Meal Prep. And here's a similar soup, also vegan, but made with butternut squash for a lovely fallish-orange color. This is a great soup to "bridge" the summer-to-fall transition since it's good served either warm or chilled. |
Summer Vegetable Curry40min/60min–ww1–pp3–sp4–fs–green1–blue0–purple0–carb13 ♥Seasonal. Weight Watchers Friendly & Freestyle Friendly. Not just vegan, Vegan Done Real. Naturally Gluten Free. Note the zero points, Weight Watchers! :-) |
Yellow Squash Soup with Spinach: Early Autumn Leaves in Soup25min/40min–ww1–pp2–sp2–fs1–green1–blue1–purple1–carb8 ♥Simple Soup, Comfort Food. Great Color. Weight Watchers Friendly. Low Carb. Easily Vegan.I first made this Yellow Squash Soup back in 2005 during that first year of A Veggie Venture when I cooked vegetables in new ways every day for an entire year. Anyway. I was so entranced by the color then and remain so today! Isn't it lovely? |
Fresh-Tomato Chili40min/24hrs–ww4–pp5–sp6–fs4–green4–blue4–purple4–carb10 ♥Great for Meal Prep. Low Carb. High Protein. The trick here? Use up fresh tomatoes to make chili, sure, but most of all, top a bowl of hot chili with fresh tomatoes. Swoon ... |
