About September's Recipe Collection

My husband and I have this big debate: does the weather turn cooler at Labor Day? I say no. He says yes. I say September's still hot. He says September's a touch cooler.

But the thing about September is, right? that we're both right. Because seasonal cooks and seasonal eaters take our cues not only from what's in the market but also from the shorter days, the cooler evenings, the darker mornings, whenever they begin. Some years, some days, some parts of the world are warmer than others but some years, days and geographies are cooler. These are the "bridge" months, the ones where we on one side of the bridge are the summer tomatoes and cucumber salads and on the other are the first butternut squash and heartier soups.

A Veggie Venture's now fifteen-year collection of September vegetable recipes reveals exactly that, some recipes that are decidedly summery, others showing signs of fall.

Happy cooking, happy eating, all, wherever your place on the "bridge" ...

Seasonal Salads for SEPTEMBER

Apple Cider Vinaigrette, another healthy no-oil salad dressing ♥ AVeggieVenture.com.

Apple Cider Vinaigrette

5min/24hrs – WW0 – PP0 – SP1 – FS1 – NetCarb4

Vegan. Oil Free. Naturally Gluten Free. Very Weight Watchers Friendly! Low Carb.

If you meal prep just one thing every week, make it salad dressing! Here, we eat salads at least twice a day and often use a drizzle of some sort of homemade salad dressing (though not this one) on morning egg-side vegetables too.

Warm Lentil Salad with Spinach & Goat Cheese

25min/60min – WW2 – PP3 – SP4 – FS2 – NetCarb8

Year-Round Kitchen Staple. Great for Meal Prep & Meatless Monday. Low Fat. High Protein. Naturally Gluten Free. Weight Watchers Friendly. Vegetarian.

Warm Lentil Salad with Spinach & Goat Cheese, another easy, delicious meal prep salad ♥ AVeggieVenture.com.
This easy lentil dish was b-u-r-i-e-d for years but was resurrected to stand on its own a year back. It's one of those one-pot suppers we all love, especially (at least here) early in the week.

Tomato & Rice Salad

10min/10min – WW2 – PP2 – SP3 – FS3 – NetCarb11

Weight Watchers Friendly. Naturally Gluten Free. Not just vegan, Vegan Done Real.

Tomato & Rice Salad, another easy-easy summer salad ♥ A Veggie Venture, so so simple, just a mix of ripe and juicy summer tomatoes and leftover cooked rice. Weight Watchers Friendly. Naturally Gluten Free. Vegan.
Leftover rice + some good tomatoes + 10 minutes = a refreshing summer salad, one that's become a summer staple here. So good! PS For anyone else who needs a rice fix every so often, this is a great way to keep the carbs in control.

Easy Steamed Bok Choy Salad

10min/15min – WW1 – PP2 – SP2 – FS2 – NetCarb6

Quick to Make. Great for Meal Prep. Weeknight Easy. Weight Watchers Friendly. Low Carb. Easily Gluten Free. Vegan. Best Salad Sept 2013.

Easy Steamed Bok Choy Salad ♥ AVeggieVenture.com, steamed in the microwave or in a steamer. Great for Meal Prep. Weeknight Easy. Weight Watchers Friendly. Low Carb. Easily Gluten Free. Vegan. Best Salad in Sept 2013. How often do you cook bok choy? Not often? Not often enough? LOL Me either. But this is an easy way to experiment with bok choy, the others are Bok Choy Salad with Homemade Creamy Vinaigrette and Kalamata Tuna Salad Bok Choy Wraps.

Beet Salad with Sumac, Yogurt & Pita

15min/15min – WW2 – PP3 – SP4 – FS1 – NetCarb9

Low Carb. Weight Watchers Friendly. Quick-Quick to Make.

Beet Salad with Sumac, Yogurt & Pita ♥ AVeggieVenture.com, a quick beet salad turned appetizer when served with a garlicky yogurt sauce and fresh pita bread. Low Carb. Weight Watchers Friendly. Quick-Quick to Make.
With just two of us at the table now, it's some times fun to open a bottle of wine (or pour some lemonade), put some appetizers between us and, well, call it "dinner". This is a great starter, just add some raw veggies, a few olives and fresh melon slices. Tis a social, shareable feast!

Cherry Tomato & White Bean Salad

25min/35min – WW2 – PP2 – SP2 – FS1 – NetCarb5

Fresh & Seasonal. Hearty & Filling. Full of Rosemary-Garlic Flavor. Low Carb. Weight Watchers Friendly. Great for Meal Prep.

Cherry Tomato & White Bean Salad, another easy summer salad ♥ AVeggieVenture.com, soft white and almost-creamy beans full of rosemary-garlic flavors. Hearty & Filling. Low Carb. Weight Watchers Friendly. Great for Meal Prep.
Bean salads can be a little ... um ... blah? But for this salad, the oil used in the dressing is infused with rosemary and garlic, flavoring both the creamy white beans and the tomatoes.

Mighty Perfect Cabbage & Broccoli Coleslaw

40min/60min – WW1 – PP2 – SP3 – FS3 – NetCarb10

A Cook's Illustrated Recipe. Pretty Color. Great for Meal Prep, a Refrigerator Salad. Not just vegan, "Vegan Done Real".

Mighty Perfect Cabbage & Broccoli Coleslaw, another easy slaw ♥ AVeggieVenture.com, colorful fresh cabbage and broccoli, cooked a little - just a little - in the microwave before adding a low-calorie vinaigrette. Cook's Illustrated Recipe. Pretty Color. Great for Meal Prep. Vegan. Gluten Free.
Cook's Illustrated set out to fix all that go wrong with coleslaw and came up with this slaw. The best news? The techniques can be used in your own favorite coleslaw recipe. I made this slaw this month and it was as good on the 10th day as the 1st.

Raw Butternut Squash Salad

20min/20min – WW1 – PP2 – SP3 – FS2 – NetCarb12

Unusually Raw. Beautiful Color. Vegan. Best September Salad in 2011.

Raw Butternut Squash Salad, another surprisingly raw salad ♥ AVeggieVenture.com. Beautiful Color. Vegan. Best September Salad in 2011.
Raw butternut squash? Really??? Really. Choose a small butternut and grate it, you'll be surprised how sweet and tender it is.

Spaghetti Squash Salad with Tomato, Basil & Feta

20min/30min – WW1 – PP2 – SP4 – FS2 – NetCarb8

Fresh & Summery. Save Time With the Microwave. Low Carb. Weight Watchers Friendly.

Spaghetti Squash Salad with Tomato, Basil & Feta ♥ AVeggieVenture.com, the squash is cooked in the microwave! Fresh & Summery. Low Carb. Weight Watchers Friendly.
I'm less keen on spaghetti squash than many others, sure it's low in calories but it just doesn't have much flavor, does it? So long as you doctor up spaghetti squash with other ingredients, all's good! I do like to use spaghetti squash to bulk up what would usually be a high-calorie dish, think Buffalo Chicken Dip with Spaghetti Squash.

Julia Child's Lentil Salad

20min/60min – WW5 – PP6 – SP7 – FS6 – NetCarb5

Healthy Legume Salad. Laced with Autumn Herbs. Great for Meal Prep. Vegan. Low Carb.

Julia Child's Lentil Salad ♥ AVeggieVenture.com, soft, meaty lentils in a simple garlicky vinaigrette, served warm, at room temperature or cold. Healthy Legume Salad. Autumn Herbs. Great for Meal Prep. Vegan. Low Carb.
Julia Child fans, add her simple lentil salad to your repertoire! I especially like the "fall flavors" in this salad, also topping the "decidedly brown" salad with cooked egg for appearance's sake. Make it a meal? Absolutely.

Quinoa Salad with Chickpeas

45min/45min – WW4 – PP5 – SP7 – FS2 – NetCarb28

Concept Recipe. Call It a Side or Call It Supper.

Quinoa Salad with Chickpeas, another easy concept recipe ♥ AVeggieVenture.com, add any vegetables that you have on hand.
If you're looking for a great base for a quinoa salad, start here. With both quinoa and chickpeas, this salad is both filling and satisfying, even a small serving at a time.

Seasonal Soups for SEPTEMBER

Tomato & Sour Cherry Gazpacho

15min/15min – WW1 – PP2 – SP3 – FS1 – NetCarb15

Savory Summer Chilled Soup. Quick to Make. Beautiful Color. Weight Watchers Friendly.

Tomato & Sour Cherry Gazpacho ♥ AVeggieVenture.com, a cold summer soup, tomatoes paired with cherries for a slightly sweet gazpacho. Weight Watchers Friendly. Beautiful Color.
Who has sour cherries in the freezer? (I sure wish I did this year ... ) I adore tomato and fruit combos for Spanish-style gazpacho, this one takes a sour turn that's quite lovely. Would rhubarb work? I think so. What else is sour, maybe tomatillos? rhubarb?

Yellow Squash Coconut Soup

30min/90min – WW2 – PP3 – SP4 – FS3 – NetCarb11

Concept Recipe. Beautiful Color. Vegan. Great for Meal Prep. Best Soup September 2007.

Yellow Squash Coconut Soup, a riff on Julia Child's master soup recipe ♥ AVeggieVenture.com. Concept Recipe. Beautiful Color. Vegan. Great for Meal Prep. Best Soup September 2007.
Yellow squash makes the prettiest soups! And this one employs a Julia Child technique to thicken the soup, rice (or here, farro) to thicken the soup.

Butternut Squash Soup with Mango & Toasted Coconut

30min/3hrs – WW2 – PP3 – SP5 – FS3 – NetCarb13

Beautiful Color. Smooth & Satisfying. Serve Hot or Cold. Great for Meal Prep.

Butternut Squash Soup with Mango & Toasted Coconut, another easy vegan summer salad ♥ AVeggieVenture.com, a smooth almost custard-like soup, served chilled on warm days or warm on chilly days. Beautiful Color. Great for Meal Prep.
And here's a similar soup, also vegan, but made with butternut squash for a lovely fallish-orange color. This is a great soup to "bridge" the summer-to-fall transition since it's good served either warm or chilled.

Summer Vegetable Curry

40min/60min – WW1 – PP3 – SP4 – FS0 – NetCarb13

Seasonal. Weight Watchers Friendly & Freestyle Friendly. Not just vegan, Vegan Done Real. Naturally Gluten Free. Whole30 Friendly. Paleo.

Summer Vegetable Curry ♥ AVeggieVenture.com, great for summer vegetables at their peak. Weight Watchers Friendly & Freestyle Friendly. Vegan. Naturally Gluten Free. Whole30 Friendly. Paleo.
I a-d-o-r-e big pots of vegetable stews this time of year and this curry is definitely one of them. You'll use lots of vegetables, these stews are a wonder! Here's a collection of Favorite Seasonal Vegetable Stews, ten recipes plus ten tips and techniques to "just make one" on your own.

Armenian Vegetable Stew

45min/24hrs – WW1 – PP1 – SP2 – FS0 – NetCarb8

Pinterest Loves It! Weight Watchers Friendly. Low Cal. Low Carb. Gluten Free. Paleo. Vegan. Best Soup September 2014.

Armenian Vegetable Stew, another seasonal stew ♥ AVeggieVenture. Late-summer and early-fall vegetables, eggplant, peppers, summer squash, tomatoes, okra. Weight Watchers Friendly. Low Cal. Low Carb. Gluten Free. Paleo. Vegan. Best Soup September 2014.
And Pinterest loves these vegetable stews too, this Armenian stew that's slightly sour wth lemon juice plus my very first vegetable stew, Summer Vegetable Stew. Note the zero points, Weight Watchers! :-)

Yellow Squash Soup with Spinach: Early Autumn Leaves in Soup

25min/40min – WW1 – PP2 – SP2 – FS1 – NetCarb8

Simple Soup, Comfort Food. Great Color. Weight Watchers Friendly. Low Carb. Easily Vegan.

Yellow Squash Soup with Spinach: Early Autumn Leaves in Soup, another easy fall soup ♥ AVeggieVenture.com. Simple Comfort Food. Great Color. Weight Watchers Friendly. Low Carb. Easily Vegan.
I first made this Yellow Squash Soup back in 2005 during that first year of A Veggie Venture when I cooked vegetables in new ways every day for an entire year. Anyway. I was so entranced by the color then and remain so today! Isn't it lovely?

Fresh-Tomato Chili

40min/24hrs – WW4 – PP5 – SP6 – FS4 – NetCarb10

Great for Meal Prep. Low Carb. High Protein.

Fresh-Tomato Chili ♥ AVeggieVenture.com, top all your chili bowls with fresh tomatoes! Great for Meal Prep. Low Carb. High Protein.
The trick here? Use up fresh tomatoes to make chili, sure, but most of all, top a bowl of hot chili with fresh tomatoes. Swoon ...
