Cauliflower "Hummus" ♥

Today's low-carb "hummus" recipe, made with (surrrrprise!!) cauliflower instead of chickpeas. And I have to say, cauliflower has done the impossible again, converting itself into something it's not, this time lower-calorie, low-carb hummus. Really, there's no telling the difference. Not just vegan, "Vegan Done Real". Naturally Gluten Free.

About March's Recipe CollectionSeasonal cooks know the feeling: it's not yet spring, not yet. (In fact, my hometown of St. Louis is slated for a weekend of snow and single-digit temps this very weekend.) But seasonal cooks are beginning to lighten up our palates. Soups, yes, but a little bit lighter. Salads, of course, nothing indulgent but hearty enough for a light lunch or soup+salad supper.
