Day 84: Apple Juice Slaw ♥

Apple Juice Slaw, another healthy salad ♥, naturally sweetened with apple juice. Vegan. Low Carb. Gluten Free. WW friendly!
What an easy coleslaw! Better yet? It's naturally sweetened with apple juice (instead of processed sugar like most other coleslaws) which adds a lovely tart-apple tang that really makes the coleslaw stand out from the crowd. Weight Watchers Friendly. Low Cal. Low Carb. Gluten Free. Paleo. Not just vegan, "Vegan Done Real". Better still? Totally tasty!

WAY BACK IN 2005 Add this to your collection of great, every-day slaws, this one with a spike of apple. The recipes comes from my sister Adanna who reports that her family goes through "a lot" of cabbage. And why not? It's cheap, convenient, tasty and healthful.

The first time I made Apple Juice Slaw, we were together on vacation so my sister got to sample it. "This is really apple-y," she said – and she was right. The second time, the slaw turned out less apple-y but I have no idea why. The third time, it was a little bit apple-y and plain fresh and wonderful!

This is what I call a "refrigerator salad" – that means it makes a bunch and keeps a long while in the fridge, doled out a few spoonsful at a time. In fact, Adanna says that when the cabbage itself runs low, she adds another bag of grated cabbage to the remaining liquid in the jar. Aha! That makes this almost a "loaves and fishes" coleslaw that never runs out! And speaking of fish? This coleslaw is terrific served alongside fish!

Makes 12 cups

12 ounces (340g) frozen 100% apple juice concentrate, thawed (the microwave works great)
1 cup (225g) apple cider vinegar
6 teaspoons vegetable oil
6 teaspoons yellow or Dijon mustard
2 teaspoons celery seed
Salt & pepper to taste, be generous!

1 large onion, grated
3 large carrots, peeled and grated
3 large ribs celery, chopped fine
3 10-ounce bags cabbage slaw, preferably angel slaw

DRESSING In a very large bowl, whisk all the dressing ingredients.

SLAW Stir in the onion, distributing throughout the liquid. Stir in the carrots, celery and cabbage. Transfer to a glass storage container and refrigerate until ready to serve.

MAKE-AHEAD TIPS While Apple Juice Slaw can be eaten right away, the flavors do develop over a couple of days. I wouldn't hesitate to make this one or two or even three days before serving. Every so often, I'd upend the jar to re-distribute the liquid.

QUANTITY This makes one big bunch of coleslaw, perfect for a party or a large family but maybe too much for a small family even over the course of a couple of weeks. I've written the recipe so that it can easily be divided by three.
