Who's tired of the same-old same-old coleslaw? If so, boy are you ever in for a treat! There are so many great ways to eat cabbage besides coleslaw. It deserves a frequent appearance in a healthy diet, whether raw (perhaps a Green Cabbage Salad?) or cooked (think soft, luxuriant Cabbage Noodles). And have you tried cabbage in soup? It adds this lovely sweetness, be sure to try Peasant Cabbage Tomato Soup. Or super-healthy fermented cabbage, commonly called sauerkraut? The traditional pairing is with pork such as Thick Chops with Sauerkraut & Apples but we also love a hot dish version of the classic deli sandwich, a Reuben Casserole.

Cabbage 101: THE BASICS
Pronounced [KA-bij]. The recipes on this page are for the most common varieties of cooking cabbage:

Green Cabbage
Cabbage Sprouts
Red Cabbage (also called Purple Cabbage)
Savoy Cabbage
Napa Cabbage (some times called "Chinese cabbage")
Sauerkraut (fermented cabbage)

The Season. Cabbage is a cool-season crop but thanks to the miracle of our global food distribution system, inexpensive, high-quality cabbage is available year-round.

How to Select Cabbage. Look for tight, heavy heads of cabbage. Don't worry if the outer leaves are a little gnarly, break them off to find fresh, perfect leaves inside.

How Long Does a Head of Cabbage Last? A whole head of cabbage keeps for a long while in the fridge, think two or three or even four weeks. Once it's cut, the cabbage will begin to wilt and deteriorate but still, it will work for another several days.

Bags of Cabbage A bag of precut cabbage is convenient but can cost three to four times more than a full head of cabbage. (See Easy Coleslaw with Blue Cheese & Apple for more detail and discussion.) But if there's ever a "healthy" convenience food, it's a bag of cabbage so when time is an issue, go for it!

To refresh the cabbage, rinse it in a colander first. If you're going to use it in coleslaw, say, also run it through a salad spinner so the coleslaw doesn't turn out watery. If you're going to cook it, there's no reason to use the salad spinner, the extra liquid will cook off.

But do be cautious. Once I bought several giant bags of cabbage from Sam's Club several days before making a giant batch of Alice Waters’ Coleslaw for a post-wedding pig roast. The day of the wedding, I opened the bags and oh my, so stinky. I sent my husband to the store for several heads of cabbage and put the food processor to work, totally stressed that my "convenience" turned out to be a real pain in the you-know-what.

How to Revive Wilted Cabbage Cabbage will go limp after a couple of weeks in the fridge, especially a partial head. It's still great for cooking but to revive limp cabbage, just chop it up and drop it into iced water for a few minutes.

Special Diets. Cabbage is gluten-free, paleo approved, South Beach diet approved (Phase 1), a zero-point food for Weight Watchers and Whole30 approved. (Naturally, specific preparations matter to each of these eating regimens.) Can you imagine eating nothing but watery cabbage soup for a week? The Cabbage Soup Diet is a fad diet designed for short-term weight loss, mostly water loss.

Natural Pairings. Cabbage works especially well with apples, bacon, caraway, carrots, cream, garlic, ginger, onions, pork, potatoes, sour cream.

Red cabbage is a thing of beauty, just cut a head in half to revel in its cross-sectional architecture! (For a photo, see red cabbage.) Unfortunately, when cooked, red cabbage will lose its beautiful red-violet color and turn a muddled and unappetizing blue-gray; add a splash of vinegar to help the color remain true. Red cabbage has 10x more Vitamin A than green cabbage!

Recipes Especially for NAPA CABBAGE
Napa cabbage comes in a noticeably-light and light-colored oblong-shaped head. (For a photo, see Napa cabbage.) I tend to sue Napa cabbage more like lettuce since it's especially easy to chop while raw, just chop-chop. Try putting a mound of chopped Napa cabbage under a stir-fry, it'll wilt slightly with heat, wonderful! In Chinese culture, Napa cabbage symbolizes prosperity. Napa cabbage is the most perishable cabbage. The term "Chinese cabbage" can refer to either "Napa cabbage" or "bok choy".

Recipes Especially for SAUERKRAUT
Sauerkraut [pronounced SOW-ur-krowt, where sow rhymes with bough] means "sour cabbage" in German. Sauerkraut is a busy cook's friend (it's already cooked), a dieter's friend (it has hardly any calories and tons of fiber), a frugal shopper's friend (it's cheap)! That's practically a miracle food. Sauerkraut is finely cut fermented cabbage with a long shelf life and a distinctive sourness that "makes," for example, the reuben sandwich. Sauerkraut is sold in cans, jars and plastic pouches, I always recommend the jars or pouches for best flavor, you'll find these in the refrigerated section of your grocery store. You can some times find homemade sauerkraut with a good butcher or sausage maker, it's worth seeking out! During World War I, in the face of anti-German sentiment, U.S. sauerkraut makers began calling sauerkraut "Liberty Cabbage". Sauerkraut and pork are traditional foods on New Year's Day by the Pennsylvania Dutch. Sour cabbage is a Serbian sauerkraut where whole cabbage heads are fermented without vinegar or boiling. Kraut juice is the juice from sauerkraut, a mix of cabbage juice and the pickling brine. It's some times used in cocktails!
