Me, I can't get enough of this easy grab-some-staples and toss-it-all-in-a-bowl no-recipe kind of recipe. The cottage cheese brings protein to the bowl, a full 18 grams, that's in meat territory. The greens and crunchy vegetables force me to slow down and enjoy. It's fast, it's fresh, it's delightful. But the real reason this breakfast salad works?
Everything Bagel Seasoning. I'm sprinkling this stuff on everything (including said good proteins) but I really love how it makes this breakfast salad come to life. I've tried it with simple salt and pepper: that's good but not special, not something to happily eat every day all summer long.
Oh. And one more reason? This breakfast salad holds, no hunger pangs well until lunch-time.

Okay, people, here's where you come in. This is my first breakfast salad and I a-d-o-r-e it, it's been breakfast several days a week for some weeks now. But maybe you've been eating salad for breakfast for forever? Or have an easy breakfast that could be called a salad? Leave me a note! Let's start a new trend!A Shout Out to Homemade Egg McMuffins
Another breakfast on the repeat button this summer? My sister's copycat Homemade Egg McMuffins. For a fast hot breakfast, they can't be beat. The eggs are cooked in the microwave! There's just something extra-delicious about hot egg and melting cheese. These breakfast sandwiches are so good and have none of those processed fast-food chemicals. I haven't had a drive-through Egg McMuffin in years but to my taste, my sister's Homemade Egg McMuffins are a super-close match except fresher and whole-food friendlier.

RECIPE for EVERYTHING BAGEL BREAKFAST SALAD

Just six ingredients!
Fresh spinach, cut into ribbons
A few tomatoes, halved or quartered
A mini cucumber, chopped
A scoop of cottage cheese
A sprinkle of chopped cilantro
A sprinkle of Everything Bagel Seasoning
Layer all the ingredients in a bowl. Admire its prettiness then stir it all together in a giant joyful mess, the cottage cheese wet the vegetables, acting as a "salad dressing". Dig in and enjoy! Look forward to the same thing tomorrow and the day after. Ooops, better get more cottage cheese.
MAKE-AHEAD Sure, you could. In fact, this would be a great Mason jar salad to take to work, just put the cottage cheese on the bottom so everything on top stays fresh.
VARIATIONS The spinach-tomato-cucumber combo is my favorite but obviously, use your own favorite vegetables or whatever you've got on hand. I also some times make this salad with non-fat Greek yogurt instead of cottage cheese – hello, Weight Watchers, that's a zero-point easy breakfast! But to my taste, it's good, just not quite as good. It also doesn't hold me to lunch quite as well but some healthy fats from a little chopped avocado staves off pre-lunch hunger.

Much of the world eats salad or veggies for breakfast so why shouldn't we? I'd make it one step easier still - make enough of your favorite salad the night before and simply open the tub of left overs for breakfast. My favorite is a salad that was dressed the night before and has gotten really cold and maybe just a little limp. Put some cheese, or last nights protean (why can't I have chopped chicken for breakfast??) and you are set to go.
