Help! What would you make with this pile of ...


... beet greens? They were too beautiful to leave at the market this afternoon. I have plans for the beets, would welcome ideas for the greens! I could make the delicious greens from Day 85.

But I'd prefer far fewer calories AND in the spirit of the Veggie Venture, I'd like to try something new!

Ideas are welcomed - but time is of the essence, they won't be fresh for more than another day!

  2. I like beet greens. My favorite way to cook any greens is to put some olive oil in a wok and flavor it on low heat with chunks of garlic, peppercorns, and some dried ancho peppers. Then remove the flavor-makers, turn the heat up, and throw in a lot of chopped onions. When those are tender, toss in the greens and quickly stir-fry until wilted.

  3. Sorry for delay,but I have just seen your site a few minutes ago.
    I cut them into pieces,saute them in olive oil ( put the green leaves a side, for a few minutes),then add some sliced carrots,saute for 15 min.,add some salt and pepper,then add the green leaves and again saute for 5 min.The carrots will change their color and this will turn out to be a nice coloured dish.
    Maybe you try this next time.
