Slow Cooker Recipes for Vegetables
Regular readers of A Veggie Venture and my food column Kitchen Parade know that I have a love-hate with relationship with slow cookers. Yes, I know that makes me a total outlier: so many cooks live and die by their slow cooker recipes! But here's why I don't.
UNPREDICTABILITY I've bought one slow cooker after another. One runs hot and burns the food. Another runs cold and never finishes cooking. The lid breaks on one, the ceramic pot cracks on another. And on and on, over many years.
MUDDY TASTE To my taste, slow cookers make one big mush of flavor. Instead of melding flavors, instead of allowing individual flavors and textures to stand out, slow cookers just mush all the food up.
So why do I share this perspective?
Perhaps to explain why I have so few slow cooker vegetable recipes among the 1300+ recipes here on A Veggie Venture.
To assure you that the slow cooker recipes I do have, I "own" them and happily make them over and over again.
For the record, while I don't love slow cookers, I do love slow cooking, just not in a slow cooker. I use my oven for slow cooking All.The.Time! I put a big pot of stew or chili in the oven at a very low temperature (something just above/below the boiling point, say 200F to 220F) all day long and then reduce the temperature to the lowest temperature my oven will do (here that's 180F) to hold it until serving time. Works like a charm!
