Pumpkin Smoothies ♥
Pumpkin Smoothies, just five minutes and five pantry ingredients. Love your smoothies? Yeah, of course! This one tastes much like a cold 'n' creamy pumpkin pie. Gluten Free and paleo. Not just vegan, "Vegan Done Real".
We interrupt this pumpkin programming – but wait, wait! One more, just one more pumpkin recipe! This is an easy one, one that'll carry you right through Thanksgiving. It's really pumpkin-y, in fact, it tastes much like a pumpkin pie, as if the filling didn't set and has been chilled. It's slightly sweet but really filling.
RECIPE for PUMPKIN SMOOTHIES
Hands-on time: 5 minutes
Time to table: 5 minutes
Makes 3.5 cups, easily halved

2 frozen bananas
1-1/2 cups unsweetened almond milk
1 cup (235g) canned 100% pumpkin purée (not pumpkin pie filling)
3 tablespoons molasses
1/2 teaspoon pumpkin pie spice
Freshly grated nutmeg, for topping
In a blender, mix bananas and almond milk until smooth; if needed, turn off the blender and move the banana around if it gets stuck. Add remaining ingredients. Pour into cups, sprinkle with nutmeg.

SWEETENER I'd really hoped that the bananas would add all the sweetness that seems spot-on for a smoothie. But no. I added molasses just a tablespoon at a time, it was surprising to me how much it took to taste right. Because it really does add to the calories, maybe your tastebuds need less sweetness? Sorghum has some fewer calories, maple syrup and agave or honey about the same as molasses.
PUMPKIN PIE SPICE I'm completely enchanted with this year's pumpkin pie spice with a touch of cardamom. It's here with these addictive Pumpkin Spice Lattes. But if you already have some on hand, just what you have.
MAKE-AHEAD Too much to eat right away? Yeah, here too. But Pumpkin Smoothies keep in the fridge without changing color, without turning watery. Nice to have on hand for a quick treat!
