Day 141: Golden Carrots ♥
Today's simple carrot salad, just grated carrots tossed with orange, cilantro and Moroccan spices. Gluten-free and Weight Watchers friendly. Not just vegan, "Vegan Done Real".

2005: Five minutes flat. Ingredients easily kept on hand. Kid friendly. Can't beat that combination! While tonight there was no forgoing the convenience of pre-grated carrots from the grocery store, to my taste the new "carrot convenience product" carrots were cut too thick, closer to a julienne cut. Plus, they were dry. Another time, I'd pull out the food processor or a standing grater to grate whole carrots: I suspect fresh-cut surfaces will better absorb the fruit juices too.
Veggies for Kids
KID #1, an 8-year old finicky eater: "It's good. I like the oranges best. The cinnamon tastes really good."
KID #2, a five and 9/10-year old adventurous eater: "Hey! This is crunchy! What's the green stuff?"
2015: I did indeed grate fresh carrots and the salad was definitely a juicy-orange. But I also played with the spices, adding a Moroccan combination of cumin and cinnamon, also a little salt to brighten it all. Twas good!
RECIPE for GOLDEN CARROTS
Hands-on time: 15 minutes

1 pound carrots, peeled and grated
2 oranges, zest and juice
2 tangerines, chopped
1 tablespoon honey
1/4 teaspoon cumin
1/4 teaspoon cinnamon
Fresh cilantro, chopped
Salt to taste
Combine all ingredients.
ALANNA's TIPS & KITCHEN NOTES
WHO KNEW? You can grate two and sometimes even three carrots at once on a standing cheese grater. It does save a little time, this works for all but the last couple of inches. You could also use the food processor or a mandoline to grate the carrots.
