My cupcake adaptation of a Cook's Illustrated recipe for carrot cake, it has a light cupcake crumb and is lightly spiced with carrot-cake flavors. I especially like the cream cheese frosting! Oh people, if you're looking for a weeknight-easy veggie burger, this recipe belongs on the top of your make-now list. I call them Chickpea Cakes (this word dancer does love alliteration ...) but really, you might call them chickpea patties or even chickpea burgers.
