Running Round-Up: Fennel

"The fennel is beyond every other vegetable, delicious. It greatly resembles the largest size celery, perfectly white, and there is no vegetable that equals it in flavor ... indeed I prefer it to every other vegetable, or to any fruit."

- Thomas Jefferson, Garden Books

Many thanks to NYC photographer Tara Harnad
for permission to use her fennel photograph!

In February 2006, A Veggie Venture and other food bloggers cooked our fill of fennel! This is a running round-up of the round-the-world fennel dishes we collected, terrific sources of inspiration, one and all!

  1. What a surprise Alanna! Thanks!

  2. Hey Alanna!
My recipe isn't vegetarian, but it does have fennel in it. Here's the permalink.

  3. Fennel, Apple, and Clementine Salad.

An old recipe, but tasty. I'll try to add a new one, too.

  4. I made the Fennel Goulash a couple of nights ago for dinner with veggies from our CSA farm here in Wisconsin. I served the goulash with Himalayan Red Rice. It was a great meal which my husband and I both enjoyed. I did use the smoked Spanish paprika as you mentioned in one of your suggestions. Really good stuff.
